Grandpa's Hero Sandwich
- 1 round focaccia bread
- ¼ cup Italian dressing
- 4 to 5 lettuce leaves
- ¼ pound sliced provolone cheese
- ¼ pound sliced Busseto Dry Coppa
- ¼ pound sliced Busseto Salami
- 8 pepperoncini peppers, drained and cut lengthwise
Cut bread in half. Drizzle dressing evenly over cut side of bread. Layer lettuce, cheese, dry coppa, salami and peppers on bottom half bread. Top with other half. Secure loaf with toothpicks or small skewers. Cut into 6 wedges.
Greek Pizza w/ Dry coppa, Tomato, Olives and Rosemary
Topping
- 6 thick slices Mozzarella
- ¾ Cherry or roma tomatoes, halved
- 1/3 cup Small olives
- 1/3 cup capers
- 3 T Fresh Rosemary
- 20 slices Busseto Dry Coppa
- Fresh Black Pepper
Preheat oven to 425°F. Place two baking trays that will fit the pizzas into the oven to heat. If using fresh dough, divide into 4 pieces and roll out on a lightly floured surface until 2-3mm (1/3 inch) thick.
Place the pizza bases onto nonstick baking paper and brush well with oil. Top with cheese, tomatoes, olives, capers, rosemary, coppa and pepper. Slide the pizzas on the paper onto the hot baking trays and place in oven. Bake for 15 minutes or until the crust is golden. Serve with salad greens.
